BLUE PINOLE CORN FLOUR WITH RAW PILONCILLO SUGAR & CINNAMON (100g)

On the slopes of the Popocatépetl volcano, in Puebla, is the Nahuatl community of San Mateo Ozolco where more than 50% of the population has migrated to the United States in search of better opportunities and income. The idea behind ​​the "Amigos de Ozolco" initiative is to produce a high quality pinole, so that migrants can return home again and join a productive activity that provides them with a decent and promising job. Those who return are invited to weed their grandparents or parents cornfields and to recover the native blue corn from their own lands.
Pinole is made by selecting and roasting the blue corn kernels on the comal until they are puffed and then put it into traditional grinding where they can add granulated raw piloncillo sugar and cinnamon, cacao, orange peel or amaranth.
It is rich in minerals such as calcium, iron, magnesium, phosphorus, potassium, sodium, and zinc. Gluten free and chemical free. 100% agroecological.
Ideal for energy smoothies, such as cornmeal for pancakes and gluten-free pastries.
